You need a cable called a "PrintPack" adapter, it's actually not just a plain cable adapter but there's some logic and buffering in the cable, too. Ebay will likely be the only place to find the old ones. They used to be made by a company called "GDT" and it's likely this era of adapter the you want, "GDT PrintPack" (anyone know for sure which work on 7.1? there were a few revisions of the old GDT printpack cable, earlier would likely be better for this use). Newer ones will not work since they are for USB ports (the new company was "Infowave" for a while, they have changed hands yet again, anyway Infowave adapters are unlikely to work with 7.1 even if they are not the USB adapters).
So, it may be possible to do if you get the right old adapter, but it would take some time and fiddling and possibly some luck. If you don't wish to risk it, and the sneakernet :) method of getting the printout from the DOS machine is working fine, I'd just keep doing that. And, buying a older Mac desktop still won't help with the printing issue; no macs have parallel port printer connectors which is what that Epson has. You'd still be in need of either the adapter, or a printer with a mac printer port on it.
HTH. If you want to try and buy something on ebay, first try and find out (from here or elsewhere) which models of old Printpack cable would be the best to buy- you could waste money trying cables out.
