I did some tests.
Will put them on my web page along with the "materials and methods" and "results".
In the meanwhile these are the results.
The stock PB 5300ce, regardless the System or OS, is very slow. I cannot remember how I felt it back in 1995/96 when I moved from the 180.
By today standards the seem pretty similar with their original system software (180 with System 7.1 and 5300 with System 7.5).
System 7.6 vs. OS 8.1: no big difference. It is true that OS 8 has more PPC code, but it is more CPU demanding.
Install SpeedDoubler, I suggest SD 8.0.1, and with 7.6.1 the 5300ce really screams.
OS 8 + SD is still okay, but if you do not need the nice OS 8 feature I would stay with 7.6.
Without SD OS 8 seems slightly more responsive than 7.6.
With 7.6 you can run Office 98. With 8.1 you can run Office 2001.
OS 8.5 and 8.6 are nicer, but even more demanding, so that the higher % of PPC code is balanced by the higher requirements and the results is a slower machine.
OS 9 takes ages to startup, but then it is pretty usable although I don't see any reason to use OS 9 on a 1995 computer.

I agree, going to 8.1 on my 5300cs was the worst thing I ever did.. I'm now in the market for an 0s 7.6.1 cd..
