Dave: Which Mac are you trying to install on (incl. processor upgrade etc.)? The only time I had such a message (saying that the computer cannot start with the installer startup disk's OS) was when I tried to startup a 040 powerbook with a PPC floppy.

Not sure if this applies, but when you start up with OS 8.0 (not 8.1), HFS+ volumes will give unwanted results. Maybe they don't mount, or the desktop is rebuilt automatically--I don't quite remember.
