Hi there!
I am the proud owner of several vintage Powerbooks, but most recently I got a G3 Wallstreet and tried to open it up to upgrade the RAM. But, it seems that the bolt that secures the heat shield is stripped so the shield is stuck in place. And, I need to replace the PRAM also. Is there another way to get to the RAM and the PRAM? Would my local Mac store offer a bolt removal/replacement? I REALLY need to make these improvements, but I'm truly at a loss. Please help me.

What sort of head is it? Philips screw, Hex head, Allen screw, Torx ?
If it's a Philips head or torx can you either grab the outside with a small vise grip plier or insert and turn ( counterclockwise) a bolt extractor ?
A trip to Sears ort the auto parts store can get you the appropriate sized tools.
A visegrip plier would also grip the outside of a hexhead or capscrew head.
Can an antisieze spray be worked into the threads?
If all else fails a sharp small drill bit to drill out only the center of the "bolt' may be necessary to get an extractor bit in deep enough.
Patience and caution and a steady hand will do the job. No coffee drinking or fidgety nerves for this job.
A Mac shop will probably use one of these methods unless they have a Wallstreet case to sell you. Or whatever part needs to be broken out if the " bolt " refuses.
