I recently did exactly what you're trying to do - I installed OS 9.0.4 from an iMac CD and it worked well. I did need to disable some extensions, namely:

"Time Synchronizer"
All "Software Updater" extensions
All "Fax" extensions
All "Airport" extensions
All "ATI" related extensions
All "DVD" related extensions
All "Firewire" related extensions
All "USB" related extensions

You'll also need to copy the CDRom Toolkit extension from the old OS System folder to the new one so that the built in CDRom can be recognized.

When you restart, it should boot up OK (mine did).

Then you can copy the applications from the OS 9 CD to the computer.

I got these instructions from the guy who sold me the OS 9 CD and it worked.

I reinstalled the USB driver separately since I added a USB PCI card. And I guess you can reinstall the other extensions with their respective hardware as needed.

I then downloaded OS 9.1.1, then 9.1.2 from Apple and installed those normally. Apparently that's how far it could go since it wouldn't install 9.2.
