I'm not sure SpamSieve works well with IMAP... Other than this, my needs are close to yours in terms of number of accounts and mails/day, and I use the "leave on server, remove when deleted here" settings, which allow me to both identify and erase spams only once* and to access all the rest from everywhere. Once every few months, I scan my mails by size and delete the really big ones so as not to grew on the popserver forever, but my experience is this growth is really slow indeed. (*) in fact I don't even download all the spams because I also use a maximum size limit for the auto download, so sometimes SpamSieve has to work on partial emails, which it does perfectly well...
