Although this is on calm canal water I would need clear advantages to use an expensive digi camera over a cheap old 35mm body.
Don't know how wide you need, but if you take a stroll down Tottenham Court Road in London, you'll see various remote video camera kits for far less than the price of a video camera. All this stuff is also available on the web. You can get a small inexpensive video camera lens and chip mounted on a small circuit board. You can then connect this to a standard video monitor to provide your viewfinder. If cables are a problem, they supply wireless microwave transmitters too.
I've seen similar set-ups used on kite-cameras too. In the documentary 'War Photographer', director Christian Frei mounts one of these on top of James Nactwey's EOS1. It's so wide that you see Nactwey's hand on the shutter and s/speed dial as well as the picture he is framing.
