The Apple Mail app does need training but it's so easy! All you have to do is mark any message Mail says is Junk if it's not, and any mail which slips through. You'll find it works straight out of the box, it just requires a little reassurance! After a week or two you can turn training off. SpamSieve requires a little more work to train but works as well as Mail app. These methods are much easier and better than setting up rules. They work using Bayesian filters.
