Talking through the top of my head, if your printer can print the difference between 254 and 255, it is probably doing OK.
The profile is converting 255 to 254.
The profile itself isn't going to change over time and if it used to print 255 as 255 and white, then personally I would suspect that upgrading to PS 7 has resulted in you altering your conversion to the profile path.
In the convert to profile dialogue window, if you alter the engine from Adobe ace to apple CMM or Apple colorsync, this stuffs the white point on all the profiles that I have just tried.
