Well ColorSync is the underlying technology that ICC profiles are built
upon. It's sort of like saying why doesn't anyone talk about the combustion
engine anymore, Is this a dead technology for some reason?

That was one of the original ideas of the Mac ColorSync control panel. Very
few industry vendors have adopted the abilities lying there however, and
those who have have done so less, eh, intuitively. One reason might be that
all vendors would have to invent something entirely differently for the PC
platform (which didn't at the time have system wide colour management
abilities). Consequently most have chosen to implement a non ColorSync
control panel based solution on both platforms.

Leaf software and Photoshop among others can be set up to take advantage of
this panel, so that for example the Default input profile for leaf cameras
could be chosen here, as well as default working spaces on Photoshop.

It may be possible to assign a printer profile to your printer under OS X in
the colorsync utility. BE aware though that you would always use the Apple
CMM (or wouldn't know at all) and the default rendering intent built into
the profile this way. No access to Black point compensation in Photoshop as
this only works with the Adobe ACE engine.

However, rather than doing a profile to profile, I'd prefer to simply select
the profile in the printer space menu under photoshop's print dialogue box,
thus converting on the fly while printing...
