I'll add an in-between choice that I'd try first. If not happy with it then go for one of Neil's suggestions. Try Gimp-Print. I've not used it with a large format Epson but the 7000 is shown as at least partially supported. I have had very good luck printing with Gimp Print to other older Epsons that have no OS-X driver available. Its a no cost option so you might as well at least try it. If Gimp Print will do what you need then that keeps you out of the Classic hassle and spares you the expense of a RIP. My only real headaches with OS-X have all centered around using Classic. Avoiding it if possible is a very good thing.
