The Only and main difference between firewire & USB is simply SPEED !

Briefly, if you have 1GB card on your camera it will take a couple minutes to download all 400 RAW images using USB, while using a firewire cable it will take a couple of seconds!

So, firewire is a type of connection 'more commonly used' for heavy downloading your DV images into (let's say eg.) imovies.

If you're not fuss either iphotos or image capture (OS X bundle) will do the trick! How ever some people may say it's bug and I do personally use my EOS 10D Software or lately use Photoshop CS (the new version) to directly open RAW files, adjust them and re-save them if necessary.

So, no, no image altered till you edit on Photoshop or similar.
