This is true, it is impossible to overwrite a raw file. However... you can apply image adjustment settings to raw images in Photoshop CS and update the file or batches of image files. Because the raw file can not be manipulated, these adjustments are held in the image cache either in the Library folder or can be saved locally if you export cache. You can also append metadata to raw files. This information has to be stored in a .xmp sidecar file that will be saved to the same folder as the image.
Thank you for the further explanation of how this works. I was especially intrigued with the "legal" aspects. The courts here do not recognize digital photographs as evidence it seems but raw files can be used in such a manner.
