I have been following this thread with interest and at this point I may have something to offer. When photographing high key sets with dslr set on auto balance there may well be changes between shots. Best to set a custom balance or at least a pre set flash colour temperature.
However the biggest problem is overlighting the background causing all the problems being discussed. When using film it is usual and quite in order to overlight the background in order to create density on the film which will not print. Not so with digital over lighting will take it outside the range of the chip and create the problems outlined. What needs to be done is to pull the lighting back so that a white is exposed as such and not blown out.
