Shoot in RAW. When you open the file in Photoshop CS, the Adobe Raw Converter dialog box will open allowing you to change colour balance, exposure etc.. You can also increase the size of the file (I can upsize the files from my 1Ds from 4064x2704 pixels to 6144x4088 with ARC). This is then saved as a 16bit TIFF (if you select 16bits/channel in the dialog box).

Presumably you'll have a computer with you so you can do a test to make sure all the settings are correct/to avoid surprises.
