Should I shoot in RAW?
How then do I get it into Photoshop CS to do any manipulation?
What if I need to interpolate? ....I'm got PS CS on a G4 with OSX 10.2.8. Assumed it might be simple.

It is quite simple. Shoot RAW. Import the files into the Photoshop CS File Browser. Click on a RAW file and the Adobe Camera Raw plug-in will open with the relevant file in the window. You can now adjust colour temperature, brightness and shadow points, etc. Then select output size (sounds like you need 4256 x 2848, which will give you a 34.7MB file in 8 bit). You can also choose to output a 16 bit file (good idea if you are going to post process in PS). Then click OK and post process the resulting file as usual and save in the file format of your choice (TIFF, etc).

Shooting in RAW makes upsizing of this scale very simple but, more importantly, allows you to correct overblown highlights, colour temperature, etc. You'll get a better file from RAW than from shooting JPEGs. Good luck.
