A camera profile saves post production colour correction time, although creating one for each specific lighting setup takes time itself, so one must be balanced against the other. If you are only shooting one shot in a particular setup it probably isn't productive to create a profile. If however you are shooting 500 shots, it probably is.
Like you, I always grey balance for each setup on our Sinar 23's and 43 backs, and although they produce pretty good colour, the Sinars do tend to oversaturate some colours, particularly reds, and there are always some individual colours that record incorrectly. I recently shot a large quantity of kitchen electrical equipment and one particular manufacturer had a logo in a shade of greeny cyan which recorded in every shot as a pale blue,and had to be colour corrected at Repro. A camera profile may have helped in that situation.
