Here is Epson's answers to installing Matte Black in MAC OSX.

Changing between the MATTE and PHOTO black ink cartridges.
1) Install the cartridge in the printer.
2) Wait for the printer to finish the initialization process. (The power
light will return to a steady green)
3) Remove the printer from the Print Centre.
a) Open the Mac HARD DRIVE, APPLICATIONS, UTILITIES and PRINT CENTER.
b) HIGHLIGHT the STYLUS PHOTO 2200 and select DELETE.
4) Close the Print Center.
5) Add the printer back into the Print Center.
a) Open the PRINT CENTER again. Select ADD. Choose the printer connection.
HIGHLIGHT the 2200 under PRODUCT and select ADD.
NOTE: If you do not wait for the initialization process to completely finish, the driver may not detect the change.
