Nick, I think you misunderstood Kevin ...

The way I read his comments, you should open the color PDF and then
print it to your PDF output device (assuming you have one besides the
scanner).  The output from the reprint will be in B&W and should be more
agile.

If you do not have a pdf output device, you can get one for $20 on up.

The only other alternative would be to re-scan the originals or print
the colored ones and rescan them.

Sorry I didn't quite explain properly, this scanner device creates the
PDF and writes it directly to the network; I don't think there is likely
to be any way to control it by software.
