It is a production mail server and I understand your worries, The storms
don't happen here so flooding is not an issue. Slow internet is but that's
not a biggie either.
It's just me really, mixture of keeping it sort of cheap and a liking of
running my own domains here. Other than spammers it's not a big turnover
megabits wise. I don't use MAPI either, just IMAP and SMTP.
It will be a while though as I have, like most of us, too much to do.
I don't trust google is another answer. They have been found less than good
with WIFI and to trust them with data is a no.

This is an FAQ, and it is not a simple answer. Exchange does a bunch
of things that no other mail server does, and it does a lot of things
differently than any other (Perhaps you've heard "MAPI Bad, SMTP
Good?" That's not just snarky, it's years of painful experience.)
