I've just been googling around a bit, and it appears the MS store's apps
for Win 8 are pretty much desktop apps, not tablet apps. They're things
like Genealogy, Trip Designer, Quicken, etc. I'd judge they're pretty
much useless on a tablet.
What I did find is the Apple iPad store, which has lots of pictures
showing their how their apps look on BOTH an iPad and an iPhone. Worth
a look to see what it's reasonable to expect.
Your problem is that a Win 8 tablet is a brand new bastard product - a
complete PC OS with a brain-dead display. iOS and Android have only
been out about 3 years, but they have thousands of apps which work on
the tablet screen. Your second problem is that most of these are play
apps, not work apps. IMO, it's more than possible that doing work on a
tablet isn't particularly easy or fruitful, but I guess we'll have to
find that out the hard way.
Another path to check out would be the various tablet developer
packages, as well as any forums for tablet developers. I've seen Tech
Republic articles on designing forms that auto-adjust for screen sizes;
there must be more somewhere.
