Most certainly, with enough elbow-grease you'll be able to make the 
dream music server with Linux. Here's a starting article:

Also, I seem to remember something in a recent Linux Mag. I'll see if I 
can find that one...

I've been using a Mac G4 tower and iTunes. I control the system with 
VNC. But, iTunes has been getting steadily more and more bloated with 
updates and with my ever-increasing music library, and I'd like to ditch 
it for a real server.
