Source Control. VSS and Subversion are two I've dealt with. There are two methods, integrated in the IDE, and not. There are discussions in the archives here about the pros/cons of both methods. This will enable you to keep the data on the server, and keep the desktop and laptop sync'd.
Directory structures is a personal preference. I'm sure there's pros/cons to the different ideas of structures. I haven't settled on one yet, as my projects vary from related and related, but not related. I know source control can help with this, but I've not taken the time to become try/understand branching.
