Your laws down under are likely different than the laws where I reside in the USA so check with your own legal counsel, but one other option you can offer is something called derivative rights. I offer this to my customers. The rights are with specific language that state they can have the source code and can use it or make changes to it, but only use it within their own business. It means they cannot sell it to someone else, which is where I get my additional licensing. I never give up the rights to my source code. This way they know they are not locked into my services, and that it is my responsibility to keep them super happy and coming back for more.
