Chris, The send level can be adjusted in the Output window. There are two ways of getting to it: one is more automatic and the other involves an extra step. When you assign a send, the Output window comes up automatically and it's set to display the send you just assigned. There are pop-up buttons to choose which send you're viewing. Also in that list is the Main Output. When viewing a particular send, there is a volume slider which can be adjusted. Most people who use a control surface simply adjust these send levels right from the encoder knobs for individual tracks being displayed.
BTW, the Output window button in the Mix window will open the same window but default to Main output rather than a specific send. Choosing the send in the pop-up menu is that extra step I mentioned earlier. Hope that's clear.
