Hi Patrick, I don't think anybody will undertake your questions because, despite your suggestion that they're mostly yes and no answers, they're absolutely not yes and no questions. To qualify something as accessible or not is very difficult. when you ask is something accessible, there will be twenty different interpretations of how accessible it is and it's a matter of personal opinion. For example, Pro Tools is incredibly accessible but, because there are no scripts to immediately tell you which tracks are record-enabled, there are those who will say it's not as accessible as Sonar was. So, you see, your questions are not at all easy to answer. As far as Native Instruments is concerned, yes, of course, the Komplete Kontrol S series makes the Komplete Ultimate accessible, in fact, it makes it very accessible but not with 100% access to everything. Chances are, it's everything you'll ever need but one can't make a blanket statement. Omnisphere II will only be accessible in so far as you can use it through Komplete Kontrol. You could conceivably use Omnisphere by itself if you had somebody load presets and save them out as Avid presets and possibly use automation parameters within the plug-in window to control Omnisphere but you'd need a control surface to feasibly do that. Mapping controls is a complex question so I'll just say that, for Pro Tools, it's best to use an Avid control surface. Those surfaces are not cheap. In fact, they're on the expensive side. budget will have an enormous effect on what you can and cannot accomplish in Pro Tools with VoiceOver. Logic is an entirely different story and there's a list for that dAW as well.
I think there's a better chance others might chime in if you had very specific questions one or two at a time rather than a whole slew of big questions.
