Hello,

You can always change the selection mode from residues to atoms (Mouse >
Selection Mode > Atoms, at least in my version of Pymol). Then, select the
appropriate atoms and change the color for that selection. I'm sure there
are more sophisticated ways of doing this with the command line, but you'll
need to know the PDB-formatted names of those atoms to do. That likely
requires clicking on the atoms of interest anyway.
