Hi Charles,
you set the physical size of your printout in the "composition" tag.
Extent and scale of the map are set in the "Item Properties" when the
map is activated. If you need a 1:1 scale of your printout, print into
pdf and visualize with 100%. Especially text size is shown as e.g. 10pt
in the print composer and thus seems to be too huge if you want to print
large maps.

area to be printed, and get it to come into the Print Composer with the
correct zoom level. At present I get the same view as I get on my two
monitor setup. I defined the map to be 4' x 8' and brought the current
view into the print composer and get the same zoom as I see on the
monitors.
At this zoom I get the area I want but the details are so small it is
useless.
