I am replying to the list, too.
You can edit the legend in the print layout itself (delete layers,
change fonts, change labels...) but not after printing to pdf. Maybe you
should give svg export a try (never did it myself, should do it one day)
and edit the result in incscape.

you set the physical size of your printout in the "composition" tag.
Extent and scale of the map are set in the "Item Properties" when
the map is activated. If you need a 1:1 scale of your printout,
print into pdf and visualize with 100%. Especially text size is

huge if you want to print large maps.
