I agree with rewriting via some known rules.  You're saying that
only one address should ever be allowed in the From: header.  I
think that limits your users too much, even if it makes the mail
administration easier.  Your users, for instance, can't send mail
from work with an alternate (e.g. home) address in the From: line.
Mailing lists won't work either unless you make exceptions for
them.  If you are not concerned about those things, then I guess
it's a good idea :)
