Most people don't even know the headers exist let alone what's in there. To
them, Email is just a mysterious system to send stuff with.
You'll see it in the error messages as well, which I can understand
wanting to change it there. The other problem you run into there is when
an outside server contacts your server there's no way to tell your
server what hostname to answer with.
If you have enough IPs you COULD use something like VMWare and set up
guest OSes for each hostname needed, but you're then also losing the
benefit of virtual hosting.
