It is impossible to imagine that roundcube kills or messes with Dovecot.
I run roundcube on a separate web server in many cases for separation of
web services from the core mail system. Dovecot login processes dying
with Signal 15 are probably due to file permissions (don't know how that
could happen).
Another thing to watch out with Dovecot is that it's EXTREMELY sensitive
to time drift. So make sure you have NTP running on the server to guard
against that.

works fine although I still get odd IMAP login failures through RC
occasionally that i haven't tracked down yet. but mostly it works
fine. I only host for friends / family on a small single server
VPS instance (Linode).
