It's not much different from the old one: If you want to change the assignee, there is an "(edit)" link right to the "Assigned To" field. If you want to change the status to "Assigned", then, well, change the status to assigned :). Strictly speaking there is no such thing as "accepting a bug" in Bugzilla. There is the assignee, which is one thing, and there is the status. These two are independent. The old bugzilla probably had a shortcut to put oneself as assignee with a single click, but that's about all.
