Have you looked at the RpcExample contrib that provides an entirely local
demo of using the Remote table model from which you can model your
application? The first thing you should do is get that example running, with
no changes other than possibly the path to the qooxdoo directory in the
config file, so you can see it in operation. Once you have that application
working, you should then modify that remote model to serve data to your
application. Once you have that working, all browser-side, you can then work
on a matching server side to serve the data. (When you run the user
interface, I think it's the last tab that has the remote table model
example.)

Using the remote table model isn't rocket science, but it does require
seeing and working with the right examples so that you don't get lost. It
sounds like you hadn't found the right examples yet.
Don't despair. Let me know if you have trouble getting the RpcExample
running.
