This will depend on your logging set up - on my systems I've configured POP logs to go to /var/log/local0.log where I can see who has POPped from where and at what time. I've never upped the logging level further than that but the information may be possible. You could also reconstruct which messages have been downloaded by counting the number received (in the mail logs) and the number downloaded during each POP session.
