Here's one reason (of many) I would recommend going beyond 7.5.1.

CANNOT be used with systems 7.5, 7.5.1 or 7.5.2."  ___ that's a quote.

Open Transport recommends 7.5.3 or higher.  I use 7.5.3 on the LCIII
and 7.6.1 on the Quads.

However, OT can be used with 7.1, 7.1.1 and 7.1.2.  That in itself is kind
of an indicator of significance between updates and that like Psnoss wrote,
higher may not necessarily be faster or otherwise more advantageous to you.
More HD space the higher you go as well.

The simplest solid move for you right now IMHO would be to pick up
what Apple calls "7.5 Update 2".  It will take you to 7.5.3 giving you 
an extension manager and many other more-than-frills improvements.
