Ignore anything AppleSpec says and go with the profiles on EveryMac or LEM.
AppleSpec is riddled with more errors than holes in Swiss cheese.  Take a look:

Hrm...on a 580, I'm pretty sure 7.1 is supported, but it might not be...see
what EveryMac or LEM says, because I don't trust AppleSpec on that one at all,
as you can see...matter of fact, it can't *require* 7.5 because it was
introduced before 7.5 came out, IIRC.
