Might it be easier just to run a new wire from the fuse outlet to the 
headlight ?

I take it you've inspected the joints in the loom going to the nosecone 
where the original Ford loom has to be extended to reach.

One side of the alternator warning light is feed from an ignition 
switched feed (the same one as the oil warning light), the other comes 
from the output on the alternator.
An alternator will often self excite (oo err) once the engine gets over 
about 3000rpm due to residual magnetism in the alternator.
My 2+2 one does that all the time as i fitted an LED instead of a bulb, 
if you do this put a suitable resistor in parallel with the led.  I've 
not done it yet so mine doesn't start charging until i rev it over 3k 
for the first time.

Anyway, back to yours, if you start the engine but without reving it 
does the alternator charge then ?
It is possible for the warning light output from the alternator to fail 
but not the main one.

Mk3 and Mk4/5 Fiesta dashs have been fitted to the 2+2 and saloons but 
apart from having to cut down the width the main problems are the bigger 
heater assys behind the dash (which you need to match the dash so all 
the vents work) and the the steering column / shrouds etc (as the Fiesta 
has a angled solid column.
As has been said Darren has done it but with major mods to the 
bulkhead/scuttle area.
