Sean I had problems getting the V8 in my Xtreme to run cool. I fitted an oil cooler, water wetter, 3 core rad, drilled holes in the nosecone, exhaust bandage on the headers, fitted a cowl between the nosecone and the rad. In the end I fixed it by moving the rad forward and fitting a fan behind the radiator.
Before cutting holes in the nose cone/bonet, try driving without the bonnet and see if it helps the temperatures.
