Air in the system would tend to get worse and worse rather than change
randomly.
It could be the servo on the way out, if diaphram has split it can seal
sometimes better than others and cause variations in braking pressure.
If it is air in the system then i can be getting in due to a fault in
one of the wheel cylinders, the seals can fail in such a way that they
suck air in when the pedal is released but they still don't let fluid
out when the pedal is pressed.

If this is the one that cost you £350 i'd go back and make them
replace it.
