Does it have the PATS anti theft system on it with the coded key ?,
either a red key or a key with a red dot on it.
If so, is the sensor around the ignition switch still connected ?
I think there is an LED in the clock that should come on and then go out
when the ecu sees the key, if it stays on when the car is started then
it's not seeing the key.

makes zero difference.
I've not looked under the bonnet (couldn't face it haha). Leads and
plugs are reasonably new so unlikely to be anything quite so obvious;
could be fuel filter I guess, or fuel relay. Or oxygen or airflow
sensor, or some idle control problem. BUT - the main reason I'm asking
is that I'm wondering whether me stripping the interior may have done
something to cause such an issue? Only having played with carb
engine's I'm a bit adrift with ECU controlled Zetec's.
Is there anyone out there who has built a H4 from scratch that could
think of anything that I could have done by removing the interior that
could have caused it? I'm thinking cables and the such primarily.
Anything run front to back that's reasonably vital for example?
