I initially configured the EX3700 to have the same SSID/Password as my
Spectrum/Askey router, and that's when the SB Radio wouldn't maintain
the WiFi connection.  

I just tested the WiFi connection (EX3700 using it's default SSID_2GEXT
suffix), and it appears stable.  

So you're correct... this suggests the radios just can't handle a
congested/complex WiFi environment.  Even though the WiFi works now,
I'll keep using the Ethernet connection, since the cables are hidden
anyways in that room.
