I'm surprised Andy hasn't thrown his hat in yet - Octopus Computing - http://octopus.com.au/ - data center is in Sydney and my dealings with him were really good + he's a RORO Sydney frequenter.
Matt from OzPacific (previously mentioned) has been good so far, but haven't done a whole lot on the VPS I've bought from him yet so will see. Reports from other customers with him that I know have been promising though.
