Hi Mikel, I've been using Ubuntu Server as my deployment OS of choice for about 3 years (before that CentOS), I find the community is very active and almost every problem I've run into has been answered on a mailing list somewhere.
I don't believe Ubuntu Server has a GUI, you might be confusing it with Ubuntu Desktop.
