I think you should look into the state laws on child labor. I am almost positive they are not allowed to work until 1 am, whether paid or volenteer. There are a number of other problems, like students not being forced to work against religious beliefs. They can't force him to dance, but if he does a responsibility to work at the dance there are other things he can do.
There are also questions that come to mind:
Is the time the problem?
Would you have as much of a problem if your son was at a youth activity that was over at 1AM?
Is the religious conviction against dancing Your's or that of your son?
