Sniffing software is crazy expensive. The one I like the most is Sniffer Pro. I think it's currently owned by Network Associates. Another one I've tried but don't like as much as Sniffer Pro, but does cost less, is EtherPeek by Wildpackets.
On a side note, sniffing may not provide you with the results you are looking for. Sniffing packets for security would be an extremely laborious process. I think you may be looking for more of a Firewall package that detects and logs intrusions to addresses/ports you haven't opened. There's 80 gajillion of those out there. Stay way from what most people will tell you to use (BlackIce, Norton Personal Firewall, etc) as they are nothing more than another piece of software for a true hacker to hack. However, these personal products may work well for you as a detection tool for your own internal testing.
