Update on this issue> I've got this working now. I was not connecting to the server as administrator (even though I had admin rights) so the printer I setup in the account I was logged on as wasn't showing up. I was actually "grabbing" the printer from the network PC were it was physically attached. All I had to do was share the printer from the server account I was logged in as, set it up from the remote desktop session and everything worked.

But now with printer "redirect" in more recent versions, it is supposed use the locally installed printer driver.
