Sautéed Apples with Rum Sauce

from From Portland's Palate...
A Collection of Recipes from the City of Roses



INGREDIENTS FOR SAUCE:
6 egg yolks
1 cup whipping cream
1 cup milk
1/2 cup granulated sugar
3 tablespoons dark rum
2 teaspoons vanilla extract
INGREDIENTS FOR APPLES:
3 tablespoons butter
8 Golden Delicious apples, peeled and sliced
3/4 cup raisins
1/3 cup granulated sugar
1 teaspoon lemon rind
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
TO PREPARE SAUCE:

In the top of a double boiler over simmering water, combine egg yolks, cream, milk and sugar.  Cook, stirring frequently, until sauce thickens and coats spoon, about 30 minutes.  Remove from heat, stir in rum and vanilla.  Chill.

TO PREPARE APPLES:

In a sauté pan over medium heat, melt butter.  Add remaining ingredients except nutmeg and sauté over medium heat until apples are soft but not falling apart, about 10 minutes.  Add nutmeg.  Transfer to a bowl or individual dishes and serve warmed apples with chilled sauce.

YIELD: 8 SERVINGS
