Spinach Pauline

from River Road Recipes II...
A Second Helping



INGREDIENTS:
Two 10-ounce packages frozen chopped spinach, cooked and well drained
6 tablespoons finely minced onion
1/4 cup melted margarine
1 teaspoon salt
3/4 teaspoon black pepper
6 tablespoons heavy cream or evaporated milk
6 tablespoons grated Parmesan cheese
2 tablespoons cream cheese
Tabasco sauce, if desired
Italian bread crumbs
TO PREPARE:

     Cook spinach according to package directions in unsalted water.  Drain.  Sauté onions in margarine.  Add drained spinach, salt and pepper to taste.  Pour in milk.  Add cheeses and Tabasco sauce.  Mix well.  Before serving, place in baking dish and top with buttered Italian bread crumbs and bake at 375 degrees for 10 to 15 minutes.  Freezes well.
