Appetizers, Salads and Breads:
Pecan Muffins

from Atlanta Cooknotes


INGREDIENTS:
1 cup sugar
2 cups flour
1 cup milk
1 cup chopped nuts
1/2 cup shortening (butter and lard mixed and melted)
1/4 teaspoon salt
2 teaspoons baking powder
4 teaspoons cinnamon
2 eggs (beaten)
TO PREPARE:

Sift dry ingredients together and stir in chopped nuts.  Mix all liquids (including shortening and eggs).  Combine quickly with dry ingredients with little stirring.  Bake in muffin tins in a 425 degree oven about 15 minutes.

YIELD:  10 to 12
